Rainbow Cupcakes

Bright and bold Rainbow Cupcakes are as easy as 1, 2, 3... 4, 5, 6! Watch and learn...
1. Make a vanilla cake mix, and preheat oven accordingly. I KNOW, I KNOW! I am usually religiously against cake mixes but you want a runny (not fluffy) batter. Plus these cupcakes look labor intensive, even though they aren't at all, so your friends will already be impressed. Stop over achieving. 

2. Divide batter equally into bowls and add food dye/gel for each color. I used six colors.

3. Place liners in cupcake tray and spoon 1 teaspoon of each color in the center of the cup. The cake cups should be about 1/2 - 2/3 full. 


4. Bake according to mix (I'm cringing, too. It's okay.) instructions.

5. Remove from oven and cool on a rack.

6. Enjoy, and show off your colors!

    1. Most people think of lava lamps as being big, glittery, and fun. What they don’t know is that lava lamps can also be made to glow in the dark. This is done by using a black light bulb in the lamp.

      To make a glow in the dark lava lamp, you will need the following materials: a black light bulb, a clear jar, mineral oil, water, food coloring, and glitter. First, fill the jar with water. Then add a few drops of food coloring to the water. Next, slowly pour in the mineral oil so that it floats on top of the water. Finally, add glitter to the jar.

      Turn on the black light bulb and watch your lava lamp come to life! The glitter will shine and the colors will swirl around in the dark.

  6. WOW! Those are bright! Last time I tried to do an orange cake (school colors) it didn't really turn out orange. Cake mix here I come!

  10. So fun! I made these earlier this year (around St. Patrick's Day) with fluffy white frosting (the "rainbow" & "cloud") and then sprinkled gold sugar ("pot of gold"). They look a lot more intimidating than what they really are. I'll admit though, yours are much prettier and deeper in color...mine were more sorbet colored. :)

  18. do you recommend any specific food coloring/amount to get them so bright? mine always turn out more pastelly colored

  19. I recommend Ateco (there's a link for these in my #2.) or AmeriColor food gels. The gels in my experience give more vivid colors than the liquid dye drops. I used about 2 squeezes (exact science, I know) for each color.
